AI models for Australian businesses
Choosing an AI model is now as much a data question as a capability question. The same model family can be reached through the provider's own app, its developer API, a major cloud platform or, for open-weight models, your own servers, and each route has different rules about where prompts and outputs are stored and where the model actually runs.
This guide covers the main model providers Australian businesses and developers build on, including OpenAI, Anthropic, Google, Meta, Mistral, DeepSeek, Alibaba's Qwen, xAI, Cohere, Amazon, Microsoft and Moonshot. Each provider page explains the model families, how to access them, where they fit and, most importantly, which access routes can process data inside Australia.
A recurring finding: storing data in Australia is not the same as processing it here. Several services keep conversation history at rest in an Australian region while running inference overseas, and many cloud deployments default to global routing. Australian processing is usually available only through specific cloud regions and deployment types, such as Amazon Bedrock in Sydney and Melbourne, Microsoft Foundry in Australia East or Google Cloud in Sydney, or by hosting open-weight models on infrastructure you control.
Cloud model catalogues change monthly, so treat each page as a starting point and confirm the current regional availability in the provider documentation before you commit sensitive or regulated data. Where no public route meets your requirements, a private AI deployment hosted in Australia is the fallback.

Need models that keep data in Australia?
AI Lab Australia builds private AI systems that run in an Australian cloud region or on your own infrastructure, so client documents and prompts are not sent to offshore AI providers.
Private AI hosted in Australia →Frequently asked questions
Which AI models can process data entirely in Australia?
As of late 2026, verified options include current Claude models through Amazon Bedrock's Australian geographic inference profiles, several Mistral, DeepSeek, Qwen, Kimi, Gemma and gpt-oss models running in-region on Bedrock in Sydney, selected Gemini Flash models in Google Cloud's Sydney region, and a limited set of GPT models in Microsoft Foundry's Australia East region. Any open-weight model can also be self-hosted in an Australian data centre.
What is the difference between data residency and inference residency?
Data residency usually means stored content, such as chat history, files and logs, sits at rest in a chosen country. Inference residency means the model itself runs on hardware in that country, so prompts are not sent offshore for processing. Some services offer Australian storage but still process requests overseas, so ask about both before sending personal or sensitive information.
Does keeping AI processing in Australia make us compliant with the Privacy Act?
Not by itself. Onshore processing simplifies cross-border disclosure under Australian Privacy Principle 8, but you still need a lawful purpose, proper notice, security safeguards, retention controls and vendor contracts that limit how the provider uses your data. Regulated entities should also map the service against obligations such as APRA CPS 234 and CPS 230.
What does global or cross-region inference mean?
Cloud platforms often route a request to whichever region has spare capacity. Global routing can send prompts to any country where the platform operates, while geographic profiles restrict routing to one area. On Amazon Bedrock an Australian profile stays within Sydney and Melbourne, but an APAC profile or Azure's APAC data zone can include other Asia Pacific countries.
Are open-weight models a better choice for sensitive Australian data?
They give you the most control, because you can run Llama, Mistral, Qwen, DeepSeek, Gemma, Phi or Kimi weights on servers in Australia with no third-party model provider seeing your prompts. The trade-off is that you take on hosting, security patching, scaling and evaluation, and open models may trail the strongest closed models on some complex tasks.
How can we confirm where a model processes our data?
Check the provider's regional availability tables for the exact model and deployment type, not just the region where you created your account. Then review the data processing terms, configure organisation policies that block global endpoints, and test with logging enabled. For Amazon Bedrock, the model card lists in-region and geographic profile options for each source region.
Choosing a model to build on?
We help Australian teams pick models and hosting routes that meet their privacy, cost and quality requirements, then build and test the system.
